Pork belly, miso caramel, charred turnips, pickled shimeji, spiced crackling (DF)
Elements to the dish
- Heat some vegetable oil in a medium frying pan. When hot add the pork belly and place under the grill on a medium heat for 4 minutes (be careful not to burn).
- Brush the turnips with olive oil, season with salt and place under the grill to warm through.
- To plate, place the pork in the middle of the plate, add the turnips with the greens resting over the pork. Sprinkle the pickled shimeji mushrooms around the dish then pipe dots of miso caramel around finishing with the spiced crackling.
